It`s the Sunday before Thanksgiving and I am excited about this time of year. I think it`s the butternut squash. It is my favorite food.

Like most people, I have a tendency to crave sweets in many situations&when I`m sad, overtired, nervous, happy, excited, hungry, whatever. It is no surprise; the stress of traveling, shopping, budgeting, visiting family, etc. can quickly send us searching for sugar in any form knowing it will offer for a moment a feeling of calm and well being. And during these months our search is short because we are inundated with holiday sweets.

The problem with these quick sweet remedies is they are simple carbohydrates that, among other things, do not offer sustainable energy. A short time after eating these treats, our bodies are left with no natural sugar (energy) to burn for the remaining time in between meals. This leaves us tired and hungry for more.

Enter butternut squash. It is a winner not only because it tastes delicious, its natural sugars offer that calm feeling when eaten which can steer us away from more highly sugared, damaging sweets. Squash is a whole food and a complex carbohydrate. It is warming in nature, reduces inflammation and is high in vitamin A. Eaten every day, squash is an excellent way to get more energy, nutrients and sweet flavor all in one food.

We just brought home a bag full of beautiful butternut, acorn and delicata squash from our farm share at Brook Farm in New Paltz, NY. I am looking forward to roasting them and serving them with our Thanksgiving meal. Please enjoy the butternut squash soup recipe below. RECIPE

Squash and White Bean Soup

Ingredients:
olive oil
1 onion
2 cloves garlic
1-2 stalks celery
1-2 carrots
1 butternut squash
1 large finger of ginger
white beans (1 can or 1 cup dry)
parsley
umeboshi vinegar
sea salt & white pepper
Directions:
Peel, de-seed and chop squash
Chop onion
Peel and chop garlic
Heat oil in large soup pot
Add onions and garlic (turn down heat). Coat with oil.
Chop celery and carrots and add to pot
Peel and chop ginger
Add squash making sure to stir
Add water enough to cover vegetables
Add ginger
Let simmer until squash is tender
Chop parsley for soup
Optional: use hand held blender to blend soup or transfer to blender or food processor
Stir in beans, salt & pepper and vinegar to taste
Stir in parsley

Cathy is a Board Certified Holistic Health Counselor trained through The Institute for Integrative Nutrition in New York, New York. As well as a H.H.C., Cathy is also a Board Certified New York State and Michigan State Licensed Practical Nurse, currently working towards her RN certification. Lysa Ingalsbe is a Registered Nurse, holds a BA in History from Bard College, is a Certified Holistic Health Counselor from the Institute of Integrative Nutrition, is trained in Polarity Therapy and Aromatherapy and is currently continuing her nutrition studies at the Canadian School of Natural Nutrition. Her mission is to enhance the quality of life of the people she works with through lifestyle and nutritional support. She helps clients develop awareness about their relationship with food, to identify and respond to their own nutritional needs, and to help them choose foods and activities that provide vitality and create wellness. Lysa lives in the Woodstock area, with her husband, three beautiful children and their dog.

Noel is a certified Holistic Health Counselor trained through the Institute for Integrative Nutrition. She is currently pursuing her training in Pilates at The Moving Body in Woodstock, NY and holds a BA in psychology from SUNY New Paltz. Her love for life and learning has led her to starting The Sunshine Club Playhouse where she has created a nurturing and inviting atmosphere for children. Irene O`Brien is a `Whole-Life` Nutritional Counselor and Life Style Coach, certified by the American Association of Drugless Practitioners. (AADP). Irene completed her undergraduate work in Cork, Ireland before moving to the USA and discovering the Institute for Integrative Nutrition in Manhattan where she graduated with honors. Irene is the founder of "Creating Health" a leading Holistic Health Practice in New York City. Irene provides nutrition and wellness programs for individuals, groups and organizations and lectures at a number of venues in the New York area.
